Ingredients

1 large (12-14 inch) flour tortilla
-
⅓ cup of Monterey jack cheese
-
½ cup of Mexican rice
- ⅓ cup of onion-y pinto beans
-
2 thighs of chicken, chopped
- Handful of french fries
-
¼ cup guacamole
- 2 tbsp salsa verde
-
2 tbsp of spicy crema
- 6 boneless, skinless chicken thighs
- 3 chipotle peppers in adobo sauce
- 3 tbsp Zab’s St. Augustine hot sauce

Juice of one lime
-
1 tsp garlic powder
- 1 tsp salt
- 2 tbsp olive oil
- 4 tbsp Zab’s hot honey

1 cups sour cream
- 1 tbsp Zab’s Hot Honey
- 1 tsp paprika
- 1 tsp garlic powder
- ¼ teaspoon salt

juice of 1 lime

3 tbsp vegetable oil
- 1 cup uncooked rice
- 1 tsp garlic powder

1 tsp chicken bouillon
-
½ tsp ground cumin
-
1 tsp salt

¼ cup chopped onion

2 cups chicken bone broth
- ½ cup tomato sauce
- 1 can of pinto beans drained
- ½ small white onion
- 1 tbsp tomato sauce
-
1 tbsp olive oil
- 1 tsp smoked paprika
-
1 tsp garlic powder
- 1 tsp cumin powder
- 1 tsp cayenne pepper
-
1 tsp hot honey
- 1 cup chicken bone broth

Onion-y Pinto Beans
Method
St Augustine Style marinated chicken
- Finely mince the chipotle peppers and add to a bowl with the hot sauce, hot honey, lime juice, minced garlic, salt, and 2 tbsp olive oil.
- Add chicken thighs and marinade to a 9x9 baking dish. Massage the marinade into the chicken thighs. Cover with plastic wrap and marinate in the fridge for at least 1 hour. (I marinated overnight).
- After marinating, preheat oven to 400F.
- Bake chicken thighs for 40-45 minutes at 400F.
Hot Honey Crema
Add all ingredients to a medium mixing bowl.
- Mix with a fork or a small whisk until smooth!
Mexican Rice
- Add oil, rice, garlic powder, salt, and cumin to a small pot or saucepan. Stir constantly, until puffed and golden.
- Add onion; cook and stir until onion is translucent.
Stir in chicken bone broth and tomato sauce; bring to a boil.
- Reduce heat to low, cover, and simmer for 20 to 25 minutes. Fluff rice with a fork.
Onion-y Pinto Beans
- Add oil and onion to a sauce pan. Saute for 4-5 minutes.
- Add your tomato sauce, hot honey, and spices.
Add the drained pinto beans.
- Add chicken bone broth and simmer for 5-10 minutes until the sauce has thickened.
Mash about ⅓ of the beans with a wooden spoon.
Burrito
- Sprinkle shredded cheese across the middle of the tortilla leaving a 1-inch between the cheese and the edges of the tortilla.
- Top cheese with rice, then beans, then chipotle hot honey chicken, then french fries, then salsa verde.
- Place guacamole along one side of the filings.
Drizzle with the hot honey crema and Zab’s St. Augustine hot sauce and enjoy!
