In a bowl, pat the wings dry with a paper towel, and season with a couple big pinches of salt. Toss.
Add a nice drizzle of oil (maybe a tablespoon), and toss.
Sprinkle in 1 tablespoon of baking powder, toss. Add another tablespoon of baking powder, and toss again.
Place wings in the air fryer and set a cooking timer for 30 minutes. Toss or turn the wings one or twice throughout the cooking time for even crisping.
In a saucepan, melt the butter. Add many twists of fresh ground black pepper, the Zab's hot sauce, Zab's Hot Honey, and orange zest.
Let simmer to reduce and infuse until desired consistency is reached (should coat the back of a spoon).
Taste, and adjust with salt, rice wine vinegar, orange zest, honey, and black pepper to taste. It should be spicy, sweet, sour, and peppery.
In a bowl, toss the wings in the sauce until thoroughly coated.
Plate and garnish with more Zab's Hot Honey, black pepper, and sliced scallions. Enjoy :)
